Grilled Veggie Fajitas

Serves: 4 | Prep Time: 20 minutes
Ingredients:
· 2 bell peppers (use a mix of red, yellow, and orange), sliced
· 1 red onion, sliced
· 2 zucchinis, sliced into planks
· 1 tablespoon olive oil
· 1 teaspoon chili powder
· 1 teaspoon cumin
· 1 teaspoon smoked paprika
· 1 teaspoon garlic powder
· Salt and pepper to taste
· 8 small flour or corn tortillas
· Optional toppings: guacamole, sour cream, salsa
Instructions:
1. Toss sliced veggies with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
2. Grill on medium-high heat for 4–6 minutes, turning until slightly charred. (A grill basket works well for this!)
3. Warm tortillas on the grill for 1 minute per side.
4. Assemble fajitas with grilled veggies and toppings of choice.
