Creamy White Bean VEGGIE Dip

Serves: 4 | Prep Time: 10 minutes
Ingredients:
· 1 can (15 oz) white beans, drained and rinsed
· ¼ cup crumbled feta
· 2 tablespoons olive oil
· Juice of ½ lemon
· 1 tablespoon fresh dill or parsley
· Salt and pepper to taste
· Pinch cayenne, optional
· 8-10 mini cucumbers, sliced into spears
Instructions:
1. In a food processor, blend beans, feta, olive oil, lemon juice, and herbs until creamy.
2. Season with salt and pepper to taste plus a pinch of cayenne if you want a little kick.
3. Serve chilled or at room temp with sliced cucumbers for dipping
