Garlicky Shrimp with Cherry Tomatoes

Serves: 4 | Prep Time: 15 minutes

Ingredients:

 

·      1 pound large shrimp, peeled and deveined

·      3 cloves garlic, grated

·      2 tablespoons olive oil

·      ¼ teaspoon red pepper flakes

·      1 pint BLOSSOM™ cherry tomatoes, halved

·      Juice of ½ lemon

·      Chopped fresh parsley, for garnish

·      Salt and pepper to taste


Instructions:

 

1.    Pat shrimp dry with paper towel and season on both sides with salt and pepper; set aside.

 

2.    Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes, sauté for 30 seconds. Add shrimp and cook for 2–3 minutes per side.

 

3.    Add cherry tomatoes and cook until they soften slightly.

 

4.    Finish with lemon juice and parsley. Serve over rice, pasta, or crusty bread.
