Sheet Pan Chicken with Tomatoes

Serves: 4 | Prep Time: 15 minutes
Ingredients:
· 1 pint TopMix™ Tomato Medley
· 4 bone-in, skin-on chicken thighs
· 1 red onion, sliced
· ½ cup Kalamata olives
· 2 tablespoons olive oil
· 1 teaspoon dried oregano
· 1/2 teaspoon red pepper flakes (optional)
· Salt and pepper to taste
· ½ cup crumbled feta cheese
Instructions:
1. Preheat oven to 425°F. Line a baking sheet with parchment.
2. Arrange chicken thighs on the sheet and surround with tomatoes, onions, and olives.
3. Drizzle everything with olive oil, sprinkle with oregano, salt, and pepper.
4. Roast for 35–40 minutes, or until chicken reaches 165°F.
5. Sprinkle with feta before serving.
