Veracruz Baked White Fish with Tomatoes

Serves: 4 | Prep Time: 15 minutes
Ingredients:
· 4 white fish fillets (such as cod or halibut)
· 1 pint Beyond Sweet™ Grape Tomatoes, halved
· ½ cup green olives or Castelvetrano olives, pitted
· 1 small red onion, thinly sliced
· 2 cloves garlic, minced
· Juice and zest of 1 lime
· 2 tablespoons olive oil
· Salt and pepper to taste
· Fresh cilantro or parsley for garnish
Instructions:
1. Preheat oven to 400°F.
2. Place fish fillets in a baking dish and season with salt and pepper.
3. Scatter tomatoes, olives, onion, garlic, lime juice/zest, and olive oil on top of the fish.
4. filets. Season again with salt and pepper.
5. Bake for 15–18 minutes, or until fish flakes easily. Garnish with fresh herbs and serve with rice or couscous.
