Savory Yogurt Bowl with Tomatoes

Serves: 4 | Prep Time: 15 minutes


Ingredients:


●      1 cup plain Greek yogurt (full-fat preferred)

●      1 cup Red Cocktail Tomatoes, quartered

●      1 can chickpeas, drained and rinsed

●      1 teaspoon smoked paprika

●      Pinch cayenne (optional)

●      2 tablespoons olive oil (plus more for drizzling)

●      Flaky sea salt and black pepper

●      Optional: fresh mint or za’atar for garnish


Instructions:


  1. Pat chickpeas dry. Toss with olive oil, smoked paprika, cayenne (if using), salt, and roast at 400°F for 25–30 minutes until crispy.


  2. Spread Greek yogurt in shallow bowls.


  3. Top with tomatoes, crispy chickpeas, and a drizzle of olive oil.


  4. Sprinkle with flaky salt and optional herbs or za’atar. Serve as a light lunch or appetizer.
