Sautéed Salmon with Tomatoes & Onions

Serves: 4 | Prep Time: 20 minutes


Ingredients:

 

·      2 tablespoons olive oil

·      Salt and pepper to taste

·      4 salmon filets

·      1 pint BLOSSOMS™ cherry tomatoes, halved

·      1 small red onion, thinly sliced

·      2 cloves garlic, minced

·      Fresh parsley or basil, to garnish


Instructions:

 

1.    Heat 1 tablespoon olive oil in a skillet over medium heat. Pat salmon dry with paper towel and season to taste on both sides with salt and pepper. Sear salmon filets skin-side down for 4–5 minutes, flip and cook another 2–3 minutes. Remove and set aside.

 

2.    In the same pan, add remaining oil, garlic, onion, and cherry tomatoes. Cook until soft, about 5 minutes.

 

3.    Return salmon to the pan, spoon tomato mixture on top, and cook 1–2 more minutes. Garnish with parsley and serve.
