Italian Tomato Panzanella Salad

Serves: 4 | Prep Time: 15 minutes

Ingredients:

·      4 Tomatoes on the Vine, cut into chunks

·      4 cups crusty bread, cut into 1-inch cubes (such as Italian or sourdough)

·      1 small red onion, thinly sliced

·      1 English cucumber, peeled and chopped

·      ½ cup fresh basil, torn

·      ¼ cup extra virgin olive oil

·      2 tablespoons red wine vinegar

·      Salt and pepper to taste


Instructions:

 

1.    Toast the bread cubes in a 375°F oven for 10–12 minutes until golden and crisp.


2.    In the bottom of a large bowl, whisk together olive oil, vinegar, salt and pepper.


3.    Add the tomatoes, cucumber, onion, and basil to the bowl and toss well. Add toasted bread to the bowl and toss again.


4.    Let sit for 15–30 minutes before serving. Check for seasoning and adjust to taste before serving.
