Grilled Chicken with Bruschetta Salsa

Serves: 4 | Prep Time: 20 minutes
Ingredients:
· 4 boneless, skinless chicken breasts
· 4 Roma tomatoes, diced
· 2 cloves garlic, minced
· ¼ cup chopped fresh basil
· 2 tablespoons balsamic vinegar
· 2 tablespoons olive oil (plus more for grilling)
· Salt and pepper to taste
Instructions:
1. Preheat grill to medium-high. Season chicken with salt, pepper, and olive oil.
2. Grill chicken for 5–6 minutes per side or until cooked through.
3. While chicken cooks, mix tomatoes, garlic, basil, vinegar, and olive oil in a bowl.
4. Spoon bruschetta salsa over grilled chicken and serve.
