Grilled Cheese with Smoky Tomato Jam

Serves: 2 people | Prep Time: 5 minutes | Cook time: 40 minutes
Ingredients:
For the Smoky Tomato Jam:
4 Roma tomatoes, diced
2 tbsp olive oil
½ small onion, finely diced
1 tbsp brown sugar
1 knob of ginger, finely diced
1 tbsp apple cider vinegar
¼ tsp red pepper flakes (optional, for heat)
Salt and pepper, to taste
For the Grilled Cheese:
4 slices of sourdough or rustic bread
4 tbsp butter, softened
2 cups shredded sharp cheddar cheese
1 cup shredded gouda cheese
Make the Smoky Tomato Jam:
Sauté the aromatics:
Heat olive oil in a saucepan over medium heat.
Add diced onion and cook for 3-4 minutes until softened.
Add diced ginger and stir for 30 seconds.
Simmer the jam:
Add diced Roma tomatoes, brown sugar, apple cider vinegar, red pepper flakes, salt, and pepper.
Stir well and bring to a gentle simmer.
Cook, stirring occasionally, for 20-25minutes until the mixture thickens and becomes jam-like.
Let it cool down while you prepare the grilled cheese
Bonus tip: The jam will last on the fridge for 2 days in an air tight container
Assemble & Cook the Grilled Cheese:
Butter the bread:
Spread softened butter on one side of each slice of bread.
Layer the ingredients:
Place a slice of bread butter-side down in a skillet over medium heat.
Sprinkle a mix of cheddar and gouda cheese over the unbuttered side.
Spread a generous layer of smoky Roma tomato jam on another slice of bread and place it jam-side down on top of the cheese.
Grill to perfection:
Cook for 3-4 minutes per side until the bread is golden brown and crispy, and the cheese is fully melted.
Repeat for the remaining sandwiches.
Serve & enjoy:
Serve warm and gooey, with extra smoky Roma tomato jam on the side for dipping!
