Mediterranean Chickpea & tomato Salad

Serves: 4 | Prep Time: 15 minutes

Ingredients:

 

·      1 pint TopMix™ Tomato Medley, halved

·      1 can (15 oz) chickpeas, drained and rinsed

·      1 English cucumber, diced

·      ¼ cup red onion, finely chopped

·      ¼ cup feta cheese, crumbled

·      2 tablespoons fresh parsley, finely chopped


For the Vinaigrette:

 

·      Juice of 1 lemon

·      2 tablespoons olive oil

·      1 clove garlic, grated

·      1 tablespoon za’atar

·      Salt and pepper to taste


Instructions:


1.    In a large bowl, combine tomatoes, chickpeas, cucumber, onion, feta, and parsley.

 

2.    In a small bowl, whisk together vinaigrette ingredients.

 

3.    Pour vinaigrette over the salad and toss to combine. Serve chilled or at room temperature.
