Baked Feta & Tomato Orzo

Serves: 4 | Prep Time: 25 minutes
Ingredients:
· 1 pint Beyond Sweet™ Grape Tomatoes
· 1 block (8 oz) feta cheese
· 2 cloves garlic, minced
· 2 tablespoons olive oil
· ½ teaspoon crushed red pepper flakes (optional)
· 1½ cups orzo pasta
· 2 cups baby spinach
· Salt and pepper to taste
Instructions:
1. Preheat oven to 400°F. In a baking dish, add tomatoes, garlic, red pepper flakes, and olive oil.
2. Place feta in the center.
3. Bake for 25 minutes until tomatoes burst and feta is golden.
4. Meanwhile, cook orzo according to package instructions. Drain and return to pot.
5. Stir spinach into hot orzo to wilt. Add baked feta and tomato mixture, stir to combine.
6. Season with salt and pepper. Serve warm.
