Fried Eggplant

Prep Time:20 Minutes

Ready In:35 Minutes


  • 2 TopLine Farms Baby Italian Eggplant peeled and sliced into ½” rounds

  • 2 Tablespoons Canola oil

  • 3 Eggs, beaten

  • 2 Cups dry bread crumbs


  1. Heat oil in a large skillet over medium-high heat.

  2. Dip TopLine Farms’ Eggplant slices in egg, then in crumbs and place in hot oil.

  3. Fry 2-3 minutes on each side, or until golden brown.

  4. Drain and pat on paper towels.

  5. Enjoy!
