Black Bean and Cucumber Salad

Ingredients:

  • 1 Seedless Cucumber, quartered and cut into chunks

  • 1 (15 ounce) can black beans, rinse and drained

  • 1 Cup Sweet Grape Tomatoes, halved

  • 1 Cup frozen corn, thawed

  • ½ Red onion, chopped

  • ½ Cup chopped fresh cilantro

  • 1 Avocado, peeled, pitted, and cut into chunks

  • 3 Tablespoons extra-virgin olive oil

  • 4 ½ Teaspoons orange marmalade

  • 1 Tablespoon lemon juice

  • 1 Teaspoon honey

  • ½ Teaspoon ground cumin

  • 1 Pinch salt and pepper to taste


Directions:

  1. Toss Seedless Cucumber, Sweet Grape Tomatoes, black beans, corn, onion, avocado, and cilantro together in a large salad bowl.

  2. Whisk olive oil, orange marmalade, lemon juice, honey an cumin together in bowl; season with salt and pepper.

  3. Drizzle the dressing over the cucumber mixture; toss to coat.

  4. Enjoy!
