Unlike their chili pepper cousins, bell peppers have zero heat.  They carry a recessive gene that stops them from producing capsaicin, the spicy compound.

We call them “peppers” thanks to Christopher Columbus: he encountered chiles in the Americas and, thinking they were like black pepper, brought the name “pepper” back to Europe.
